I recently saw this process in East Kalimantan (Kaltim), but the guy was producing the domes or cones of sugar using hollowed out lengths of Kayu Ulin, the Bornean Ironwood. Each hollow cone shape when full of liquid sugar would produce a 250 gm block of the hard stuff. For his days work he would usually produce about 5 to 6 kg’s in total and if I’m not mistaken sell it at Rp20,000 for a Kilo.
I’m wondering what weight of sugar the blocks in your images contain?
